Kolkata, the city of culture and an abode of intelligentsia of the bygone era, has a food fetish. Having once served as the Capital of India it is a place with a truly cosmopolitan fabric that brings together people from coastal Konkan with migrants of Bihar and Rajasthan and where people from as varied nationalities as Greece and China share a meal every day. That is probably why so many Chinese restaurants thrive in the City of Joy and perhaps why Chinese culinary influences are assimilated into the culture to the extent of Kolkata style Chowmein being found commonly on the streets. Marwaris have a role to play in the sweet tooth culture that Kolkata enjoys decadently and the Mughal rule has a hand in the saucy, meat-laden spiced concoctions that Kolkata serves.
